Vinegar Pie

Pie:
3 egg yolks
1 c. brown sugar
¼ c. white sugar
3 tbsp. cornstarch
¼ tsp. salt
¼ c. apple cider vinegar
2 c. boiling water
1 tbsp. butter
1 unbaked pie crust
Meringue:
3 egg whites
1 tsp. lemon flavoring or juice of 1 lemon
3 tbsp. sugar
Beat eggs yolks until thick. Add sugar, cornstarch, salt, and apple cider vinegar. Add 2 cups of boiling water; stirring all the time. Cook over water in a double broiler until thick and smooth. Add butter just before removing from heat. Meanwhile, bake one pie crust at 400 degrees for 3 minutes. Fill crust and put back in oven at 325 degrees. Bake until light brown. Make meringue. Cover pie with meringue and bake until crust and meringue are brown.
