Salvation Army Lassie’s Donut

“The Salvation Army served handmade donuts in the trenches to soldiers during WWI. This recipe is famous and was greatly appreciated by the soldiers but doesn’t quite meet today’s expectation of what a doughnut can be. 5 c. flour

2 c. sugar

5 tsp. baking powder

¼ tsp. salt

2 eggs

¾ c. milk

1 tub lard

 

Combine all ingredients (except lard) to make dough. Thoroughly knead dough by rolling smooth, cut into rings that are less than ¼ inch think (Salvation Army donut girls used whatever they could find, from baking powder cans to percolator tubes).

Drop the rings into the hot lard, making sure the lard is hot enough to brown the donuts gradually. Turn the donuts slowly several times. When browned, remove donuts and allow excess fat to drain. Dust with powdered sugar.
