1 to 2 tsp. shortening or canola oil
1 c. long grain rice
1/4 c. diced tomatoes
1 tbsp. green onion, diced
1-1/2 tsp. garlic, minced
1-1/2 tsp. cilantro, chopped
1 tsp. salt
1/4 tsp. black pepper
2 tbsp. tomato sauce
2-1/2 c. water

Heat shortening/oil on medium heat. Add rice and stir to slowly brown. Add diced tomatoes, onion, garlic and cilantro and stir for approximately one minute. Add water, tomato sauce, salt and pepper. Bring to a boil; cover and reduce heat to low. Cook for approximately 20-25 minutes.
