Ruth Dueñas’ Pumpkin Bread

“She made this recipe more so during the Holidays and made quite a few batches at Christmas time to give to Family, Friends and Neighbors. Everyone loved her pumpkin Bread and always asked for her recipe and she would always share the wealth. I make it every year and do the same. I hope you also get a chance to bake up a batch.”-Patsy Rodriguez

1 ½ c. pumpkin
3 eggs
1 ½ c. oil
1 c. milk
1 tsp. vanilla
4 ¾ c. flour
3 c. sugar
1 c. brown sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 ½ tsp. nutmeg
1 ½ c. walnuts 

Mix moist ingredients in one bowl and all dry ingredients in another, then blend together. Bake at 350 for 45 minutes. Makes 3 big loaves of pumpkin bread.
