“Mama Glen’s” Pancakes

“This was a Saturday ritual at my home when the children were young. After they were all grown with their own families, they would call, and we would have a Saturday where all came and brought their families and friends for pancakes. We do this at least once every three months to this day. All that still live in driving distance still come. Those who are out of state call to reminisce while all are there.”

 

3 c. flour

1 tsp. salt

2-1/2 c. milk

1/4 c. oil

7 tsp. baking powder

2 tbsp. sugar

2 eggs

2 tsp. vanilla

 

*Use more milk, if needed, for desired consistency

 

In a large bowl, sift together flour, baking powder, salt and sugar.

 

Make a well in the center of the dry ingredients, and pour in the milk, eggs and oil. Mix until smooth. Add flavoring at the end.

 

Heat your grill or skillet over medium heat. Pour one scoop of the batter onto the grill.

 

Brown until bubbles form and burst on one side, and then turn. Don’t mash the pancake.

 

Serve hot with butter and syrup.
